Expanson Plots:
House Ghosts - Mordor scare away thingy...
Spell Tower - Fires spells...
Weasleys Rockets - Isengard bomb kind of one, but with weasley products?
Arragogs Brood - Spider things like laccrosso said like the goblins
i think laccrosso's (sorry for spelling) ideas of knights in armour guarding it like a creep would be cool aswell
Upgrades:
Devilsnare - Like the spikes for goblins
Flitworks Charms - not sure about this but i seem to remember from last book something about flitwork making loads of wind around the castle
Lightning Struck Tower - Its a bit of a leap from the books but maybe use this to shoot lightning?
Tall Towers - Extra Vision
Anti-Apparate Grounds - Stops units being able to apparate closeby to the fortress =) (im fairly 99% sure i can make this work)
House Ghosts - Possible expansion instead...

i was thinking for the theme for hogwarts buildings having those tower shapes and brick/tile colourschemess
forrr the bad guys/voldemorts crew - i was thinking perhaps a snakeyy theme? what you guys think?? maybe using some of that rich black shiny bricks from the ministry? or on the other hand they could have really shabby buildings where they're hiding out instead...?
