hi. is it possible to give a dwarf taskmaster/sage a shield like guardians/king dain/axe thrower's?

Well that depends on if they have a shield as model, chances are they don't, and in this case it would not be easy to do so, you would have to edit models and all.
In order for you to do this I advise looking at tutorials on the3rdage.net
