I see that stats recorded only on 1v1, no 2v2 nor 3v3 nor 2v2v2.
Is is supposed to be this way or I miss something?

Ordinary stats do not record reliably for any format, I am afraid. The ladder stats (1vs1 and 2vs2), which you can see from Shatabrick, should record reliably.

Almost all of the games I play 2v2 are not recorded. How can I be sure that game is recorded to stats when I play?

You can look in the last 100 ladder games to see if the game appears. It can take upto 3 minutes for the game to appear there though.
