When the principals of range are brought into play does that include upwards as well or does everything fly 'within' the range of all weapons capable of firing on aircraft?

The Range of any unit acts like a cylinder. It can shoot anything within its range in the x/y axis on any z plane. Effectively, when firing at a unit in the air, the soldier can fire within the range as if it were at the same height as the aircraft.

I was kinda wondering that but this confirms it. This does explain why my missiles kept running out of fuel. 'Cause locomotor speeds ARE full 3D.
