OST's are brilliant, I love them.
I love OST's because they remind me of something I've seen, something I've played.. something I've loved.

I myself like the one's of:

[Games]
Command and Conquer: Tiberian Dawn
Command and Conquer: Red Alert 1
Command and Conquer: Red Alert 2
Legend of Zelda: The Ocarina of Time
Legend of Zelda: Majora's Mask
Legend of Zelda: The Windwaker
Unreal Tournament 2004

[Movies]
Howl's Moving Castle
Fight Club

They're so captivating, some really remind me back of the old days.
Etc.

FF 7 to X2 have good ones.
I always liked the WipEout ones, too.
CNC
Ace Combat 4 and 5 (and Zero, when it is released)
Halo and Halo2
Unreal series (always has had good ones)

Strangely, I also liked G-Police's...it just fit really well with the game.

Dunno whther anyone seen the movie "Queen of the Damned" ? The soundtrack - pure gold.
Another award goes to Fight Club, there has not been a soundtrack that fit into the movie this much.

Some really good ones are also Hans Zimmer's and some of the newer Need for Speed tracks. EA didn't screw up that much on EA trax...

The only OST that I really like are the various Lord of the Rings ones. I just love the compositions from those movies. They are all just so well written. Some well enough to envoke emotions.

- Lord of the Rings ~ Absolutely breathtaking. The consistent use of leimotif and theme puts these soundtracks at the top of my list.

- Pirates of the Caribbean ~ Sure, most of it's synthesized, but the melodies are gorgeous. And though 90% of the music is just rearrangements of the same three themes, they're damn good themes.

- Super Smash Bros. Melee ~ All of Nintendo's greatest musical hits fully orchestrated? What's not to love?

C&C: Red Alert 1

[Movies]
8 Mile (Eminem's movie.. just listen to tracks like "Lose Yourself", "Rap Game", "8 Miles" etc... pure platinum)

Bumpety Bump.

I got the second volume of the Halo 2 OST, including that gorgeous loading-screen track that I've always wanted.

Gotta agree with the FF games, LOTR, SW and a great many others mentioned here.

The Rock and Braveheart had some fantastic scores. Everyone knows The Rock theme
