The creatures have always been a curiosity of mine,very little is said of their origins in Tolkien's writings.
I'm going to be asking some questions and proposing some theories.
Just my thoughts and questions on the topic.

Trolls
Originally created by Morgoth in mockery of Ents,but not likely of Ent stock.
It is implied that they may have been made out of stone,but were they?
My theory: Morgoth being a Valar may have made them from stone and put life in them,since the Valar apparently have that power.
Aule created the Dwarves after all.
Which would sort of make them mockeries of Dwarves too.

Ettens
Are Ettens simply another name for Trolls or are they a separate creature?
Maybe they are a type of Troll like the Olog Hai.
Ettens are usually Two headed Trolls or Giants in other fantasy writings.
Gandalf mentions 2 headed Trolls at one point as well.

Vampires
There is only one creature known as a Vampire which is Thuringwethil the Bat creature who's skin Luthien used as a disguise.
Was Thuringwethil the only one,are there a race of Vampire/Bat creatures or was Tolkien using the term Vampire solely to mean she drank blood.
Thuringwethil was most likely a fallen Maia like Ungoliant,maybe she was similar and mated with other bats like Ungoliant did with spiders.

Giants
Another creature briefly mentioned by Tolkien although they could simply be a metaphor,Tolkien liked to be ambivalent like with the Balrog wings.
Since Middle-Earth was based loosely on Norse Mythology there existed Giants in it,so I wonder if they exist in Middle-Earth as well.

There are so many loose threads in Tolkien's writings so there is a lot to speculate,probably why there is so much Tolkien research and essays out there.
When Christopher Tolkien released the HoMe series and Unfinished Tales it only raised more questions.

I share your point of view , since little is known of the creatures in ME . Concerning the Giants , there are mentionned in the Hobbit when Bilbo and the Company passed in the Lone Lands , or in the Ettenmoors . They threw rocks and boulders , so the Compaany of Thorin was afraid of them . I highly believe they live in the High peaks of Misty Mountains and far in the North , perhaps in the gullies of the Ettenmoors .
About Trools , there the Hill , the Mountain and the Cave Trolls . They were surely created during the First Age or during Melkor's reign ; but it's difficult to find their origin because it's quite clueless . The Last kind of Trolls were Olog hai , created by Sauron , possibly a bred between Mountain Trolls and Orcs , or so .

I've always been interested in the exact nature of vampires since they are the least noted creations of morgoth.
