Legend of Zelda Ocarina of Time - Still the most beautiful, epic, wondrous game ever made. But then I haven't played Twilight Princess yet.
Pokemon Red/Blue: You can't deny that it started something the likes of which we have never seen before or since.
Perfect Dark - I think this just beats Goldeneye as being an utterly timeless shooter. Goldeneye, while no less fantastic, can appear very dated and slow, but go back to this, and you'll still be amazed. It's doing things more advanced than a lot of shooters today. An utterly amazing game with a fantastic storyline and some truly memorable moments.
Deus Ex - One of the deepest, most thoughtful games ever that made you think about who you were.
Medieval II Total War - Without a shadow of doubt the greatest strategy game ever made. The ultimate in PC Gaming, a true 'king simulator' where no two games are ever the same and there are more 'OH FUCKING CHRIST!' moments than any other game ever by a loong stretch.

I'll go with these in no order:
Zelda
All of them excluding the CD-I ones or whatever those abominations were actually for.
Deus Ex
The first game only, two just didn't play well enough for me.
Goldeneye/Perfect Dark
Epic games; still play them from time to time.
Final Fantasy 7
Compulsory for any thread like this. Although many preferred 8 etc. I still liked 7 the most.
Thief
Whole series, how can you not like these games? Hell, they're scarier than most survival horrors by a long shot
Castlevania
All the castlevanias are epic games. Portrait of Ruin is amazing, should have got higher in reviews - even if there wasn't enough chances to make use of both characters simultaneously.
Pokémon
It eats your life.
Silent Hill
Great survival horror or greatest?
Early sonic/Mario in general
Great platformers or greatest?

Doom is an absolute classic, but the all time best game ever quite simply had to be Sonic 3 and Knuckles. If anyone denies that, then they simply haven't played it enough.
I'm also a Soldat addict.

What can I say? Decades ahead of its time, and probably the best gameplay rts wise I've ever experienced.
Grand Theft Auto: SA
A game where you could do almost anything. From flying a fighter jet to shanking Ballas. While not everything worked perfectly, its still a great game to pop in when you're bored out of your mind.
Resident Evil Series
Always loved zombie games... and RE did a superb job of creating a beutifully suspensful environment that can still make you jump despite the horridly outdated grafix.
Civilization 2
Never played 3, and while 4 has a much broader spectrum of features, they're mostly cosmetic improvements to Civ 2.
Starcraft
Not the greatest gameplay ever, but the combination of fairly balanced factions and an incredibly compelling story line managed to hold my interest through the entirety of the campaign. Understand that I generally have an attention span of about 5 seconds, so this is an incredible feat in itself.
Mechwarrior Series:
Just an original style of gameplay, combining the strategy of putting together the ideal configuration with a test of your reaction time and marksmanship. While the game has a really hardcore fanbase, I don't think it really achieved the fanbase it deserved.

Master of Orion 1 and 2- Very good games casting me as the Imperial God-Emperor Davius IV of the Human Empire in where I get to genocide alien worlds and conquer, because I got bored over several days and felt like it. Full management is at your command and you even get to rediscover the lost city of the Orions and tip the balance in your favour using all the high tech dodgy gadget assortment that comes with it. If your enemy gets there first, board the super ship and take the technology I say, but theres something about grabbing the Death Ray in Master of Orion 1 and the Black Hole Generator device which makes it all worthwhile. Two of the best for me.
Imperium Galactica- One of the very first games me and my brother played during the early years of PC gaming. Real life actors mixed with sub-par CGI brought it to life, and even though the CGI was veeery cheesy, we didn't care. We had a blast with this game, and we loved it, going against a galaxy dominated by the Dargslan and you as the defiant Human Empire with sub-standard technology as opposed to their Mezoncannons was just full of fun.
Master of Magic- Ok, mix Heroes 3 with Civilization and what do you get? Master of Magic. Imperialist wizards casting a whole range of creatures and finding lost artifacts, creatures and training heroes from sword weilding morons to Abaddon the Despoiler, as you go on a rampage razing everything with oblivious peasants getting burninated gets my vote.
Heroes 3- Mentioned last, you go on various quests using magic and well, might, to assert dominance over Enrathia or finding some Blade that turns the world on fire. Good clean fun, and in isometric detailed animation sprite combat. Hours of fun, and still goes on today, even though it just doesn't get to the status of Heroes 3.
Homeworld- Epic. Better than it's sequel, and still lives long with me today. Epic story of the Kushan leaving to reclaim their eternal home from tyrannic despots, space pirate warlords, combat nebula zealots and a ghost ship gets my vote.
Command and Conquer: Yuri's Revenge- Now you have a psychic coup dictator, who goes off after defecting from his Soviet bonds to start his own original army full of super soldiers, incredible hulks, UFO's and giant brains stored in giant battle tanks. He also raises an army of possessed people, mind, body and soul to go fight for him using two of the most originally designed superweapons I've seen, being one of the most creative concepts ever released by EA which really surprised me. Too bad the story was a bit meh, and the online community (xwis, not the modding community) is a pig, but still this game gets in my good books.
Dawn of War: Dark Crusade: Ok so I just got it for Christmas because it's 40k I'm hooked. My Tau legions sound like the English dub of Dragonball Z Vegeta in battlesuits with blue zappy weapons which decimate entire armies and Space Marines choke and die as they fall to the pulsar rounds released by my soldiers. My Commander is a battle seasoned Japanese accenting killing machine, and my tanks are even more zappy and the Kroot just love to chomp on the charred remains. My Ethereal says 'Kor'el! Fire orbital artillery strike' and b00m, there goes more Space Marines. Love the Necrons too, with their Monolith releasing a tiny gauss charge only for it to create a small atomic sized explosion which incinerates nearly everything, flanked with soulless armies dedicated to fighting everything else. This gets into my books pretty fast.

Fallout 1 and 2: With the retro-styled everything, to the storyline, this game is original compared to all the fantasy RPGs of its day. It's always fun to roam the wasteland with Cassidy, blasting every wolf, mutated plant, and slaver that gets in your way.
Perfect Dark: In my opinion, better than Halo. It was awesome how you had to unlock things for multiplayer. Being forced to use the expansion pack to play anything other than multiplayer was a downer, though. I remember hiding in the vents to snipe unsuspecting Dark Agents with the Farsight to this day.
Command and Conquer: The first RTS series I played, and a genuinely good experience it was. GDI rules! When my computer broke, I was still able to play, due to me having a copy of CnC64. Stomping Nod into the ground was always a great pastime.
Forza Motorsport: What can I say? This game beat out the Gran Turismo series in all but quantity of cars. I still have it next to my Xbox 360, if I ever want to stomp some tuners with a Corvette.
Test Drive Unlimited: For being a Massively Open Online Racer (MOOR), and the first of its kind to boot, it's a wonderful game. Not the best customization options out there, but the boys who made it definitely did something right. Whipping around in my Mazerati feels very natural. Drifting around corners in a Skyline is great.
OLD SIG
When history witnesses a great change Razgriz reveals itself,
first as a dark demon. As a demon it uses it power to rain death upon the land,
and then it dies. However after a period of slumber Razgriz returns
As the demon sleeps, man turns on man.
Its own blood, and madness soon cover the earth.
From the depths of despair awaken the Razgriz.
Its raven wings ablaze in majestic light.
Amidst the eternal waves of time
From a ripple of change shall the storm rise
Out of the abyss peer the eyes of a demon
Behold the Razgriz, its wings of black sheath
The demon soars through the dark skies
Fear and Death trail its shadow beneath
Until Men united wield a hallowed sabre
In Final Reckoning, the beast is slain.

Fuck no! Having to unlock multiplayer features is particularily annoying, especially if you have to unlock most of the content. If it's just one or two special toys, then it's not so bad. The multiplayer on that game was REALLY poor if any map included the farsight.

Haloes 1 and 2 Numbers don't lie. Up until recently, H2 was the most frequently played game on XBOX Live. Both games recieved Phenominal reviews from EVERY reviewer out there, including the players.
Pokemon Series Again, numbers don't lie. Enough said here.
Final Fantasy VII The best Square has ever put out. I've played loads of RPGs, and even though the graphics might be dated, its still the best out there.
This is in no particular order.

Once you got to a point where you could place plasma cannons on the fighters, there was no stopping you because the high tech heavy weapons were good for attacks on large ships. But 300 fighters each with a plasma cannon was unstoppable.
Damn, I'm gonna go buy that game again and play it. I loved it Master of Orion.

@Elerium, the best weapon was the plasma cannon, even as you went up in tech you were simply able to build more plasma cannons on your ships. That totally kicked any higher level weapon.
The plasma cannons just basically incinerated everything o_O, it's more of a standard spec that gets applied to nearly all ships once discovered Although I usually stick the Disruptor as a standard ship spec. I stole the tech from the Silicoids who inturn annihilated me, but after nabbing his weapons using the Disruptor enabled me to annihilate the other races with one ship. Too bad nobody stopped his production so he eventually got bored of me and started fragging my homeworld and afterwards litterally all of my part of the starmap went red with 400 or so Silicoid battleships and titans, maybe 3 or so death stars attacking all my sectors.
Fighters are indeed miniature death on wings, but the thing is you have to watch out for enemies that have Pulsar or Spacial Converters, which are annoying.
Although several thing really got me in Master of Orion, I have ships early on which get creamed by ships which are blasting away with Laser Cannons, and the whole thing of 400 ship armadas which decides to bash some sense into you because you were falsely accused of spying, and finally the Psilons in where once you have finished research in Microbiotics they'll probably be doing Death Star Construction. It's also quite hard to play a warmongering race, as in the long run the researchers always win, and the researchers always have the headstart if you play in Pre-Warp scenarios. Finally, the whole chance of the warp core of the ship exploding always got me. A lucky shot to your titan makes it blow up and any other ship blow up with it, which annoyed me a lot.

Great gameplay , zerglings and a easy to use map editor. ( I made some really funny , yet simple maps )

anyone who had the farsight could easily dominate the map so obviously you just switch it off.
