My ideal for quite some time for the fortress, if ever I could get it working correctly, I would love to be able to do the hill fortress as described, with the tunnels leading out, etc. But then think Erebor - as you get closer to the hill, the hill then fades a little and you can see inside. It probably would never work exactly the way I want, but that was always an ideal.
Just thought I'd mention it,

And I'm against a big tree...cause that's what lorien already is. Out of all the above suggestions so far, I'd prefer elfhelm's.
That's why I wasn't too confident with my suggestion.
What if the fortress was a mangrove? Here's a picture link of what a mangrove is:

Correct me if I'm wrong but I don't think that it ever mentions in the books where Thranduil's Halls were exactly located. So I imagine that it would be by a river because Bilbo rode down a river to Lake-Town in a barrel. I forget which river he rode on though, but it might have been the Enchanted river? Anyways having a fortress on a Mangrove could be something to play with/consider.
I'm going to have to go with the caves on this one as well. But I don't think that the Elves would ever build through the caves, just around them like the Lorien elves.

If I remember corrrectly, Dol Guldur was once, under a different name, the captial of the woodland realm until it was taken and the retreat to the halls.

(if you want to act cool, at least try to use something from LOTR, lore, movies or something . . . )
"From this seal shall arise the doom of men,"
"who, in their arrogance, sought to wield our fire as their own."
"Blindly they build their kingdoms upon stolen knowledge and conceit."
"Now they shall be consumed by the very flame they sought to control."
"Let the echoes of doom resound across this wretched world, that all who live may hear them and despair."
"Tremble, mortals, and despair! Doom has come to this world!"

I'm not too keen on the moat idea... I mean, a moat for at-first-glance-a-hill would look strange. Unless, that is, you're not planning on using the EA moat. That would look strange indeed!

hill + moat = surely not, a baby hill with moat.

Just for your distraction, show with admiration a brief view of this nice game
O slender as a willow-wand! O clearer than clear water!
O reed by the living pool! Fair river-daughter!
O spring-time and summer-time, and spring again after!
O wind on the waterfall, and the leaves' laughter!
Old Tom Bombadil is a merry fellow;
Bright blue his jacket is, and his boots are yellow.

And the moat is supposed to represent the river, not an actual moat for a hill
