Big Cats, Cahik, the idea come from the concept of the Mahuds bringing the Mumakil from the savanahs and forests of Harad. We might as well scrap the whole idea of other creatures and stick to what we've got. :p

And yes there was Jungle in Far harad find it in the Two Towers in chapter on Helms Deep during the battle.
